John Hopkins Hospital is very well known on there process of the keto diet. There's includes a lot of mayo, protein, no candy, cream and sacrin, and weighing your food.

You want to slowly cut carbs because comming of carbs can actually give you flu like symptoms. Your main goal is to increase your good fats not animal fat. Your body will start burning fat for fuel. Eventually you will have a strict portion of protien fat and carbs. Carbs being 5% or lower.
