I want to start it because I think the onset of my seizures are linked to a bad diet. I'm just worried I'll find it revolting and revert back to what I eat at the moment.

I tried keto, but i wasnt able to go through with it, energy levels and my ability to focus completely dropped to non functioning. It helps with some people, but its not for every one, different people need different types of nutrition. Seizures can happen sometimes on certain foods, so if you feel like certaim foods are a contributing factor its a worth a try lookijg at different diets. For me i found a but of a higher sodium diet with low carbs but not completely no carbs to be the best for me. When i did try the keto i had to wein off the carbs first than went to absolutely only foods allowed on the strictest keto diet which there are apps or sites to help u find the right foods for the different varient levels of keto. If your looking at keto to try to help the seizures its best to go more strict. But i would also talk to your neurologist bout this, and have it all be monitored under your neurologist or doctor, befire trying it.
