What are some of the recipes? What do they mean by bad cabs? Is there anyway they know it works?

The mayo clinic figured out in the 1920's there was a relationship between food and epilepsy. If you had epilepsy back then, they would starve you for a week and you would be cured!
Johns Hopkins research medical center enveloped the Ketogenic diet and the Modified Atkins diet as a treatment for epilepsy in the late 1970's.

Spoon a table spoon of cream cheese in the middle of 1 pattie and them get another pattie and place on top, squeese together all sides to form it together.
Grill till cooked can add hard cheese on top.

Stick to green vegetables e.g. brocolli and baby spinach (which are carbohydrates). Stay away from fruit. They are high in sugar and modern cultivars don't have very high nutritional value. You can have things like hummus, which is mostly chick peas and tahini, and quinoa or lentils. The diet focuses mostly on increasing your intake of things like seeds, nuts, legumes, high fat fruit like avocado, full cream dairy and fatty fish like haddock or salmon. Stay far away from processed and starchy foods like bread, fries, potato chips, microwave meals, breakfast cereals, canned food, most take aways. Also google the banting diet. It is very low in carbohydrates and not as high in fat as the HFLC diet.
